I posted this picture on Instagram and had request for the recipe. I didn't have plans to blog about it - so I didn't write it down. The best way for me to remember a recipe is to put it on my blog so...here you go.
I put 2 T butter in a pan along with a good drizzle of olive oil. I sauted 1 small onion along with 3 cloves diced garlic. When that is soft, add some diced potato (4 small), 2 diced carrots, 2 C diced ham and 5 diced celery ribs. I added some Tastefully Simple spice called "Bacon Bacon", salt and pepper.
In the crock pot, I added 1 can great northern beans along with liquid from can. Put the sauted mix from above into the crock pot too. In the saute pan, add 4 C chicken broth (I used 4 C water and 2 t chicken base) heat. Take 2 T butter and mix with 2 T flour with a fork - smash it together - add this to the chicken broth to thicken it. If it is chunky...run through a strainer before you pour into the crock pot.
Once the liquid is in the crock pot add 4 oz. diced Velveeta cheese and let melt while cooking. Put on low and forget it!
