Pork Sausage & Wild Rice Casserole in Crock Pot



1/2 bag frozen hash browns
1 lb. pork sausage
2 carrots grated
chopped celery
1 small onion
3 cloves minced garlic
chopped parsley
2 C wild rice/brown rice mix

Last night we had wild and brown rice mix.  I used the left overs in this.  Tip:  boil wild rice in some chicken stock also boil wild rice in one kettle and brown rice in another.





While you are preparing the veggies, fry up the sausage.

Dump frozen hash browns, veggies and cooked pork sausage into the crock pot on low setting.  Add 2 - 3 C water - stir around.  




In fry pan, melt 3 T butter in drippings, add 3 heaping T of flour - make a rue.  Add 2 C milk till thick and bubbly.  Salt and pepper to taste.  I also grated some nutmeg in the sauce too.  Add 1 C  grated parmesan cheese TIP:  grate up another cup for use later.  Pour this over the rice mix in crock pot and stir thoroughly.  Cook on low all day or high for few hours.  Basically a "dump and forget it."  





Top with remaining cheese just before you eat it.  This was really good.
