Egg and Biscuit Pie

Egg and Biscuit Pie:



My hens have been very productive - for April.  I have so many eggs to use so I came up with this for supper.

Start with browning chopped bacon, onions and garlic.  When brown drain on paper towel.  In a bowl mix eggs (I used 1 doz.), splash of milk - beat together.  Add 1/2 heaping cups each of grated cheddar cheese and bacon mix.







Pour into a sprayed pan and bake for 15 min. @ 350.  While this is baking, mix up your biscuits.  Use your own recipe or Bisquick.  After 15 min. the eggs will be soft set.  Put biscuits on top and pour over with melted butter (2 T).  




Return to the oven and bake an additional 15 - 20 minutes until biscuits are brown.
