Turkey Won Ton Soup

Turkey Won Ton Soup:


This is how I made it:

Start out with making a stock - or you can use a store bought one.  I took the carcass from a roast chicken I made this week and put it in a pot along with some veggies.  I used carrots, celery, onions, garlic, mushrooms and asparagus.  You can use what you like or what you have that needs to be used.  You don't eat these veggies, they just add flavor to stock.  I also added S & P, fresh sage and rosemary and Tastefully Simple Rustic Herb mix.  Cover with water and boil and cook for about an hour till all is falling apart.  Run through a strainer.


To this clear stock, add sliced mushrooms, green onions and asparagus - cut on the diagonal.  Heat on medium/low while you prepare the won tons.


Mince up some mushrooms, asparagus, red onion, garlic and fresh ginger.  Add ground turkey and enough sesame oil to stick together.  Take the won ton wraps and put 1/2 t. of this mix in the middle.  Wet all sides with water and fold into a triangle.  Sit the bundle up on the bottom of the triangle and pinch and bring up the ends to the middle to create a bundle.  Keep them moist with a wet paper towel.




Bring stock to full boil, drop the won tons into pot.  Cover, cook on high for 5 min. then turn down to medium cook an additional 5 - 10 min.  This was really good!
