Sausage Kale Garden Soup

Sausage Kale Garden Soup


This soup is so good.  

I planted 2 types of Kale this year - regular and Russian (which is really peppery)



All I do is take a scissors and cut off the tops.  Hopefully it will grow again like lettuce.  




Brown a pound of pork sausage - ours home raised.


Add garlic and onions



Saute onions and garlic with sausage.  Add 2 cups diced celery and 2 cups diced carrots with meat mixture.







Add 5 cups chicken broth and 5 cups of water

Add 2 cups peas


Add 2 cups cooked rice


Wash kale and pull the leaves through your hand to remove the stem.  I tore the leaves into smaller pieces.  Add 3 cups of kale.




The soup was hot, so once I added the kale I turned it off and just put the lid on to wilt the kale.  


This makes a huge kettle of soup - I'm feeding some extra girls tonight.  You can adjust the amount or freeze it.
