Dicky Bird's 'Lite' Rhubarb Breakfast Cake

This breakfast cake is made 'lite' with the fat free greek yogurt.  I mixed it all in a bowl with a whisk.  Easy and ready in 35-40 minutes. 


2 Cups chopped rhubarb
1 lemon, zest & juice; let sit while mixing batter

1/2 Cup fat free greek yogurt
1 large egg
Whisk together; add
1 teaspoon cinnamon
1 teaspoon vanilla
1 Cup sugar
Whisk together until smooth; add
2 Cups flour
2 teaspoons baking powder
1 teaspoon salt
Mix together, this will be thick, add a splash of milk if needed

Fold in the rhubarb, lemon juice mixture.





Prepare a 9x9 or 8x11 pan.  Pour batter and sprinke cinnamon and sugar on top and bake 350 for 35-40 minutes.

  2. The water table was so high this year that my rhubarb died. Ugh. Have not found any in the grocery store either. My mom is going to give me another shoot and will plant it in a safer place this time...hopefully. Janice
