Granny Konkol's Blueberry Buckle

Here is a family favorite, made by Al's grandma Konkol and his mom.

Blueberry Buckle:

3/4 C sugar
1/4 C butter
Cream together add:
1 egg
1/2 c milk
Mix together; add sifted dry
2 C flour
2 t. baking powder
1/2 t. salt
Fold in:
2 C blueberries dusted with flour (so they won't sink)

Pour this batter into a prepared 9" square pan.  Sprinkle on this topping:
1/2 C sugar
1/3 C flour
1/4 C soft butter
1 t. cinnamon
grated lemon or orange rind
Mix together and sprinkle on top.  Bake 375 for 35 min.

Yummy!!!

Carol...this one is for you.  Granny Konkol is her grandma too.

Blessings from Ringle, Wisconsin.

Blueberry buckle. It looks delicious! I remember back when our kids were little there was even a Gerber baby food called 'blueberry buckle.'
