Asian and Orange Inspired Meal

Asian and orange inspired meal.

Orange and Honey Ginger Chicken Thighs
Asian Noodle Stir Fry



Mandarin Orange Asian Salad



This is how I made it.  Mix up the marinade for the chicken thighs.  



Chopped green onion
Grated garlic
Grated shallots (or onions)
Grated ginger
Orange zest
Juice from the orange

Tips:  divide this in half - half for marinade and half for the noodle stir fry.  Freeze your ginger - it will last longer.






Put the chicken thighs, diced and grated veggies together with 2 T sesame oil, 2 T vegetable oil, 2 T honey (tip:  do the oils first and then the honey slides right out) the juice from orange, 2 T soy sauce, a pinch of red pepper flakes, S&P - marinate for several hours.



Bake chicken along with marinade at 350 for about an hour.

Asian Noodle Stir Fry:



I bought these noodles at the Asian food store.  I've never made them before and they looked interesting.  I boiled them up.  I took reserved veggie mix from before and added chopped celery and grated carrots.  I put sesame and vegetable oil in wok, a pinch of red pepper flakes, add to wok - heat through spash in some soy sauce to stir up the bits in the wok.






Mandarin Orange Asian Salad



 Toast up some sliced almonds and coconut in the oven while you prepare the salad.  Lettuce, oranges, red onion and celery.  The dressing is 1/4 C mayo, 1/4 C milk, 1 t sesame oil, 1 t sugar, 1 t honey and 1 t cider vinegar - whisk together.  Sprinkle on the toasted almond and coconut mix.



This was a good meal - spicy and sweet.
