Week 30 - Rhubarb & Citrus Cookie


Another original by me (smile).

Dice up 1 1/2 C rhubarb.  (could use 2 cups for more tart)
Add the zest and juice of 1 lemon and 1 orange
Stir together with 1 T honey - let sit.




Cream together:
2 sticks of soft butter
1/2 C brown sugar
1/2 C granulated sugar

Add 2 eggs, mix well


Add:
1/2 t salt
1 t baking soda
1 t baking powder
1 T corn starch
1 C oatmeal

Mix well - to that add the rhubarb and juice


Blend well, then add 2 C flour


Drop by rounded scoops onto parchment lined cookie sheets.
Bake 350 degrees for 12-14 minutes.  Makes 4 dozen cookies.



After cooled, I made a glaze of powder sugar, vanilla and orange juice and drizzled on the top of the cookies.

So good!
