"Promise" (Fortune) Cookies:
3 egg whites
3/4 C. sugar
Whip together on high until frothy (2-3) minutes. Add the remaining ingredients, blending well after each
1/2 c melted butter - cooled down
1/4 t. vanilla extract
1/4 t. almond extract
3 T. water
1 C. Flour
Preheat oven to 375
Line cookie sheets with parchment paper.
Write out your script - fortune or I used biblical promises
Take 1 T. batter and spread very thin in a circular motion until you have a cookie about 3-4" in diameter - you can make them as big as you want.
Bake 6-7 minutes until the edges are lightly brown. My first couple of cookies were too thick - they looked more like pancakes...you might have to test the first pan. Only put 3-4 cookies on a pan at a time.
When cookies come out of oven, while they are still HOT, place your script in the middle of the cookie, fold in half. Using the side of a cup, then fold the cookie in half again. Place these in a muffin tin until they cool to retain their shape.
Be creative with these cookies...I can think of lots of themes or parties you might want to make these for. These were a big hit with the Sunday school kids (and adults).
