Nothing tastes like fall as much as squash. I had 1/2 of an acorn squash left overs - so I decided to add it to some oatmeal. Delish!
I made oatmeal - boil salted water, add your rolled oats.
I scooped out the flesh from the acorn squash - yes, that is butter in the middle along with brown sugar that is how I bake them. Add all that into the cooked oatmeal along with a splash or two of milk. Stir well - heat through
Drizzle with some honey and sprinkle with your favorite spice. Warms you right up on a brisk fall morning.
