Dehydrating Vegetables

I had a lot of beans this year.  Sometimes when you can or freeze beans, they get floppy - well, mine do anyway.  I did freeze several batches, in case these didn't turn out.  I think I like dehydrating them better.  We picked, washed and broke them into small pieces, put them on the trays and let them dry overnight.  Easy!  They taste really "beany."  





This worked so well, that I thought I would do the same with the shelled beans.  






Aren't they pretty!  Shell the beans put in the dehydrator over night.  Make sure to put the shells/pods in the compost pile....




I LOVE how they all look in my antique jars!





Then I decided to do carrots and peppers too....






I plan to work my way through the garden dehydrating....maybe mixing the veggies together to make a soup mix.  If you haven't dehydrated, give it a try, it is super easy.

  1. Looks great! Do the beans get crispy? How long did you leave them in the dehydrator? I think we have the same brand, but mine has squarish trays, rather than round. Love that thing! Your veggies look fantastic.

  2. Hi Jacky! Using the dehydrator is an excellent way to prepare the harvest! Those beans are beautiful! I need to grow those next year! What kind are they?   3. I have never thought about dehydrating green beans. They would be so good in soup. I am doing peppers in the dehydrator. Love the beans in the old jars too!
