Homemade Breakfast Hot Pockets

Home Made Breakfast Hot Pocket:

I made these using an appliance called a Snackster.  It was in one of my estate "buyouts."  I'm not sure what decade these came out, I'm thinking the 90's as I remember infomercials about them.  I have since found another at Goodwill for Justine that she used last semester in her dorm room.  I need to find one for Anna now.

Here is a healthy alternative to Hot Pockets.  You control the fat and make them with what you like.  I started out with a box of Jiffy corn muffin mix.  This is less than $1.  Mix according to directions - only, I thinned with a bit more milk.  Spray the Snackster really well...so they won't stick.  Put 1 heaping tablespoon of mix in, sprinkle with cheddar cheese and break an egg right on top.  Close the lid and let cook for 3-5 minutes.  One box will make 10 hot pockets.  If you are counting, I think 4 points per hot pocket.  You could make an egg white one and only have 2 points.  (Weight Watchers)

Freeze extras for busy mornings.

Blessings from Ringle, Wisconsin.

  1. Oh, I love this Jacky! What a great thing to have in a dorm room! I've been seeing these lately at thrift stores, but I didn't pay much attention to the price. What else can you make with these? I may have to get one! Thanks for sharing! Blessings from Bama!
